Cheesy Caramelized Onion Toast

This savory, cheesy, and absolutely delicious caramelized onion toast is the perfect mid-day snack, that's 100% vegan!

Ingredients

  • 1 loaf sourdough bread cut into slices (you can use gluten free bread)
  • 2 large yellow onions
  • 3-4 tbsp grapeseed oil
  • 1/2-1 tbsp sea salt
  • 1 1/2 tbsp balsamic vinegar
  • 1 tbsp fresh thyme
  • 1 tbsp black pepper
  • 1 cup vegan mozzarella cheese

Instructions

  1. Slice your bread and lightly toast it on both sides. 

  2. Slice your onions into thin half moons & add to a skillet over medium heat with the grapeseed oil, salt, pepper, balsamic vinegar, and fresh thyme.  Allow to cook for 20-25 minutes over medium heat until caramelized & browned.  

  3. Scoop a generous portion of caramelized onions onto each piece of toast, then top with a generous amount of shredded vegan mozzarella cheese.

  4. Place under the broiler for a few minutes until the cheese is melty and browned.  

  5. Garnish with fresh thyme, and salt / black pepper / balsamic vinegar & olive oil if desired!
