This savory, cheesy, and absolutely delicious caramelized onion toast is the perfect mid-day snack, that's 100% vegan!
Slice your bread and lightly toast it on both sides.
Slice your onions into thin half moons & add to a skillet over medium heat with the grapeseed oil, salt, pepper, balsamic vinegar, and fresh thyme. Allow to cook for 20-25 minutes over medium heat until caramelized & browned.
Scoop a generous portion of caramelized onions onto each piece of toast, then top with a generous amount of shredded vegan mozzarella cheese.
Place under the broiler for a few minutes until the cheese is melty and browned.
Garnish with fresh thyme, and salt / black pepper / balsamic vinegar & olive oil if desired!
