  • 3 flax eggs 1 flax egg = 1 tbsp ground flaxseed + 3 tbsp water
  • 16 oz. frozen broccoli chopped & mostly thawed
  • 1 14 oz. can creamed corn
  • 1 small yellow onion grated
  • salt & pepper to taste
  • 1 tbsp poultry seasoning
  • 4 tbsp vegan butter
  • 2 cups seasoned stuffing mix
  • 1 cup vegan cheddar cheese shreds
  • 2 tbsp minced garlic


  1. Preheat your oven to 350F.

  2. Make your flax egg and set aside to thicken for 10 minutes.

  3. In a mixing bowl, add your egg, broccoli, creamed corn, onion, cheese, salt, pepper, and poultry seasoning. Mix well to combine.

  4. In a small sauce pan, add your vegan butter to melt. Then add in your garlic and stuffing cubes and cook until golden brown.

  5. Add 1/4 of your stuffing cubes to the broccoli mixture and mix well to combine.

  6. Place your broccoli mixture in a baking dish and smooth into one even layer. Top with remaining stuffing cubes.

  7. Bake uncovered for 35-45 minutes until golden brown and the sides are bubbly.

  8. Wait 5 minutes to set before serving, and serve along any other "holiday" sides!
