Thai Basil Beef

Takeout that you can make in under 20 minutes at home! VEGAN Thai Basil Beef is the perfect easy weeknight meal.

Ingredients

  • 1 package Abbot’s Butcher Ground Beef
  • 1 ¼ cups carrots cut into thin matchsticks / shredded on a grater
  • ½ cup scallions both white and green parts
  • Salt / pepper to taste
  • 1 ½ tbsp minced ginger
  • 1 ½ tbsp minced garlic
  • 1 cup fresh basil chopped
  • 4 tbsp tamari
  • 2 tbsp vegan hoisin sauce
  • 2 tbsp rice vinegar
  • 1 tbsp coconut sugar
  • 3-4 tbsp coconut oil
  • 1-2 tbsp sriracha
  • Brown rice
  • More fresh basil for garnish
  • Red jalapenos for garnish

Instructions

  1. Add your coconut oil to a skillet over medium heat, then add your scallions, minced ginger, minced garlic, and some salt & cook until fragrant.
  2. Add in your ground beef, matchstick carrots, tamari, hoisin sauce, rice vinegar, coconut sugar, sriracha, and more salt / pepper to taste. Cook over medium heat until the sauce thickens, and the beef slightly browns / the carrots are tender. Right before serving add in your fresh basil & stir to combine & wilt slightly.
  3. Add on top of some cooked brown rice, and top with some more fresh basil, and red jalapenos if desired.
