
Have y’all heard of Moocho yet? They’re the amazing sister company of Tofurky and they make SUCH amazing cheeses! I recently teamed up with them both to create these INCREDIBLE Tofurky Beer Brats with Moocho Beer Cheese, and y’all… go and RUN and make these, now! You’ll be obsessed. Zach and I have already made them 3 times since shooting and probably will once a week from here on out.

So here’s how to make them! I promise they’re super easy.
Ingredients
- 1 package Tofurky Beer Brats
- 2 yellow onions
- 2 tbsp olive oil
- 2 tbsp vegan butter
- 2 tbsp apple cider vinegar
- 1 tbsp sea salt
- 1 bag Moocho Cheddar Shreds
- 1 bottle pale ale
- ½ cup plain unsweetened plant milk
- 1 tsp garlic powder
- 1 tsp sea salt
- Whole grain mustard
- Fresh chives
- Pretzel Rolls
Method
- For your onions, slice into half-moons and add them to a skillet with your olive oil and vegan butter over low heat. Add your 1 tbsp sea salt and apple cider vinegar, and cover with a lid. Cook for 30-45 minutes, stirring frequently but keeping the lid on. The last 10 minutes of cooking, remove the lid to let them really caramelize.
- For the beer cheese, add your cheddar shreds, pale ale, milk, 1 tsp salt, and garlic powder to a pot. Heat over medium heat, whisking frequently, for 20 minutes until the cheese is melted.
- Cook your tofurky beer brats, add them to a pretzel bun, top with beer cheese, caramelized onions, whole grain mustard, and fresh chives.
