Sausage & Feta Frittata with Kale & Caramelized Onions

Frittatas are one of my favorite foods, they’re such an easy breakfast or brunch option and are so versatile, almost anything is good in them. This one has kale, caramelized red onion, vegan feta and sausage crumbles… and seriously y’all good luck not eating it all yourself. Trust me, Zach and I ate the whole pan in one day!

This recipe is in collaboration with Alpha Foods! They make some AMAZING plant based meat substitutes, frozen burritos, tamales, pizzas, and more! Honestly probably my favorite faux meat brand on the market currently. But this, their crumbled meatless sausage, is on another level. It is perfectly seasoned, and you really wouldn’t be able to tell the difference from non-vegan sausage. It’s truly perfect in this recipe.

Here’s what you’ll need to make this amazing frittata!

  • 1 package Alpha Foods Sausage Crumbles 
  • Salt / pepper to taste 
  • 1 tsp garlic powder 
  • ½ tsp crushed red pepper 
  • 1 cup chopped green kale 
  • 1 red onion, caramelized 
  • 1 cup plant based feta cheese (plus more for topping) 
  • 2 containers Just Egg 

And here’s how to make it!

  1. Preheat your oven to 350F. 
  2. In a skillet over medium heat, caramelize your red onion until “jammy”. Set aside. 
  3. In another skillet over medium heat, brown your sausage crumbles in olive oil and set aside. 
  4. In an oven safe skillet, liberally coat the bottom and sides with olive oil. Add your kale, caramelized onion, sausage crumbles, just egg, and spices. 
  5. Mix gently & smooth out the top. Place on the stovetop over medium heat for 5 minutes until the edges firm up. Cover the top with more feta. 
  6. Transfer to your 350F preheated oven for 20-25 minutes until the egg is set. Then transfer to the broiler for 2-3 minutes until golden brown on top. 
  7. Allow to cool for 5-10 minutes after coming out of the oven, then slice & serve!
