
I love guacamole, especially on tacos… but my one problem with that is the guac always makes a huge mess and squeezes out! These double decker guac tacos with queso blanco make them SO much easier to eat! Layer your guac between a soft and hard taco shell, and fill with taco meat, homemade queso blanco, and all the fixins! They’re so easy, super delicious, and take almost no time to make so let’s get into it!

I’m really excited to announce that this recipe is in collaboration with Follow Your Heart! They’re one of my favorite brands, and I’ve gotten so many requests to make more recipes using their products from y’all, since they’re so accessible across the US. The product I used in this recipe is their brand new vegan finely shredded mozzarella cheese! It’s so dang good and really sends this recipe over the top!

Here’s what you’ll need to make everything!
Queso-
- 1 bag Follow Your Heart Mozzarella Shreds
- 1-2 cups plain unsweetened plant milk (depending how thick you want it)
- 1 can diced green chiles
- Salt to taste
- 1 tbsp pickled jalapeno brine
Guacamole-
- 4 ripe avocados
- ¼ cup diced red onion
- ¼ cup chopped cilantro
- Juice of 3 limes
- Salt to taste
- 1 jalapeno, diced finely
Other-
- Hard Shell & Soft Shell Tacos / tortillas
- Vegan ground beef
- Taco seasoning to taste
- Salt and pepper to taste
- Pico de Gallo
- Cilantro
- Cabbage / Lettuce
- Limes
You can really top these with whatever you want! The queso blanco, shredded lettuce, and pico de gallo are my personal favorites, but you can use pickled jalapeños, radish, shredded cabbage, corn salsa, etc.!
You can also easily make these gluten free by using corn tortillas instead of soft flour ones!

And here’s how to make everything!
- For the queso add all ingredients into a pot and cook over low heat stirring frequently until melted.
- For the guacamole, mash your avocado and mix in the other ingredients.
- Cook your ground beef with taco seasoning, salt, and pepper until browned over medium heat in a bit of cooking oil.
- Take your soft flour tortilla and spread your guac on it, then place your hard shell taco inside and wrap the soft tortilla around it.
- Fill your taco with beef, queso, and whatever other toppings you’d like!
You can use this queso and guac to just dip with chips on their own as well! But trust me when I tell you they’re truly special in these tacos.
