Caramelized Onion, Feta, & Rosemary Focaccia

One thing I love more than anything in the entire world is Focaccia! But sometimes I want some quickly, and don’t want to sit around waiting for dough to proof. This little focaccia hack will make your focaccia dreams come true & this topping combo is a 11/10. Caramelized onions, vegan feta, and rosemary? How could you go wrong?!

I’m really excited to announce that this recipe is in collaboration with Follow Your Heart! They’re one of my favorite brands, and I’ve gotten so many requests to make more recipes using their products from y’all, since they’re so accessible across the US. The product I used in this recipe is their vegan feta crumbles! It’s so dang good and really sends this recipe over the top!

Here’s what you’ll need to make this baby!

  • 3 bags fresh pizza dough 
  • 4 yellow onions 
  • 2 tbsp balsamic vinegar 
  • Salt to taste 
  • Follow Your Heart Feta Crumbles 
  • Fresh Rosemary 
  • Maldon Flaked Salt 
  • Crushed Red Pepper Flakes 
  • ½ cup olive oil, divided 

And here’s how to make it!

  1. Pour ¼ cup of olive oil into the bottom of your baking dish (about 2” deep). 
  2. Take your balls of pizza dough & combine them into one big ball.  Spread out to fit your baking dish & press holes into the dough with your fingers. 
  3. Top the dough with the other ¼ cup olive oil.
  4. In a skillet over low heat, add your onions (sliced into half moons), salt to taste, and balsamic vinegar.  Cook for 20-30 minutes stirring every 10 minutes until caramelized. 
  5. Add half your caramelized onions over top of the pizza dough , then fresh rosemary. 
  6. Bake the dough according to the package instructions until golden brown.  About 5 minutes before finished cooking, add your feta crumbles over top so they slightly melt. 
  7. When the focaccia is done, top with the remaining caramelized onions, more rosemary, flaked salt, and crushed red pepper to taste. Allow to cool for 10 minutes before cutting into it.
