Thanksgiving always yields the best food, and the Turkey is usually the star. As vegans, of course we cannot have that, but I am so thankful for all of the amazing vegan alternatives now-a-days. This year I teamed up with No Evil Foods to feature their AMAZING Pardon Roast, which is a juicy & flavorful seitan roast to make your wildest Thanksgiving dreams come true.

Here’s what you’ll need to make the roast & the gravy!

Chipotle Maple Glazed Pardon Roast

  • 1 No Evil Pardon Roast
  • ½ cup white wine
  • 1 cup apple cider divided
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 tbsp chipotle chile powder
  • 1 tbsp chipotle chile flakes
  • 3 tbsp chipotle Cholula hot sauce
  • 1 cup maple syrup
  • 3 tbsp apple cider vinegar
  • 1 tbsp garlic powder
  • Salt / black pepper to taste

Herbed Cider Gravy

  • 6 tbsp vegan butter
  • 6 tbsp all-purpose flour
  • 1 ½ cups apple cider
  • 1 ½ cups vegetable stock
  • ¼ cup soy sauce
  • 3 tbsp vegan Worcestershire sauce
  • 3 tbsp smooth Dijon mustard
  • 6 fresh sage leaves
  • 2 sprigs of thyme
  • 2 sprigs of rosemary
  • Salt / pepper to taste

And here’s how to make them!

Chipotle Maple Glazed Pardon Roast

  1. Thaw your pardon roast according to package instructions if frozen.
  2. Following the package instructions, add your roast to a pan. Add your white wine and ½ cup apple cider into the bottom surrounding the roast, and then add your rosemary and thyme. Cover with foil and bake according to package instructions.
  3. While cooking, mix together your maple syrup, remaining apple cider, chipotle chile powder & flakes, hot sauce, garlic powder, salt / black pepper to taste, and apple cider vinegar.
  4. When you remove the foil from the roast before putting it back in the oven, brush a generous amount of your glaze on top. Brush more glaze over top every 5 minutes until it’s finished cooking.
  5. Remove from the oven, brush with a little more glaze, and let sit for a few minutes before cutting.

Herbed Cider Gravy

  1. In a sauce pot, add your vegan butter to melt. Once foamy, add in your flour to form a roux. Stir constantly for 2-3 minutes over medium heat.
  2. Slowly add in your apple cider and vegetable stock, whisking constantly to prevent lumps.
  3. Increase the heat to high, then add in your remaining ingredients. Whisk until it just starts to thicken, then reduce the heat to low and continue to cook until you’ve reached your desired thickness.
