Sausage, Fennel, & Feta Flatbreads

I’m a sucker for a good flatbread… and I’m just as much a sucker for anything that has fennel in it. So I decided to combine the two to create these INCREDIBLE sausage, feta, and fennel flatbreads! They’re perfectly crunchy, creamy, tangy, and full of hearty spices. Trust me when I say these will be a new staple in your house for sure!

I’m really excited to announce that this recipe is in collaboration with Follow Your Heart! They’re one of my favorite brands, and I’ve gotten so many requests to make more recipes using their products from y’all, since they’re so accessible across the US. The products I used in this recipe are their Creamy Garlic Dressing & Feta Crumbles! They’re so dang good and really send this recipe over the top!

Here’s what you’ll need to make them!

  • 1 package vegan sausage
  • 1 tsp each ground coriander ground mustard, onion powder, garlic powder, crushed red pepper, chipotle chili powder
  • ½ tsp ground cinnamon
  • Salt & black pepper to taste
  • 1 tbsp red wine vinegar
  • 1 large bulb of fennel and its fronds for topping
  • 1 package Follow Your Heart Feta Cheese
  • 1 bottle Follow Your Heart Creamy Garlic Dressing
  • Flatbreads
  • Olive oil as needed

And here’s how you make them!

  1. In a skillet over medium heat, add some olive oil & your vegan sausage. Once it just starts to brown, add your spices and red wine vinegar. Stir and cook for 2-3 minutes.
  2. Cut your fennel into thin slices and add that to the sausage. Stir to combine and cook for about 5-7 minutes until the sausage is fully browned and the fennel is tender.
  3. Toast up your flatbread and spread over your creamy garlic dressing as the base.
  4. Add your sausage and fennel mixture over top, then some of the feta cheese, and some fennel fronds as a garnish.
  5. Cut & serve while warm.
