It’s National Pumpkin Pie Day, and while I know everyone is posting their best pumpkin pie recipes… I wanted to bring y’all something a bit different! SO I present to you the PUMPKIN SPICE MONTE CRISTO. A monte cristo is a sandwich consisting of ham and cheese melted between 2 slices of French toast, and coated in powdered sugar, jam, and optionally syrup. For this twist we did a pumpkin spice French toast, with bacon & smoked gouda slices to create the most amazing fall flavor combo.

I’m really excited to announce that this recipe is in collaboration with Follow Your Heart! They’re one of my favorite brands, and I’ve gotten so many requests to make more recipes using their products from y’all, since they’re so accessible across the US. The products I used in this recipe are their Vegan Egg & Smoked Gouda Slices! They’re so dang good and really send this recipe over the top!

Here’s what you’ll need for this amazing recipe-

  • 1 package Follow Your Heart Smoked Gouda Slices 
  • 1 package vegan bacon 
  • ¼ cup Follow Your Heart Vegan Egg 
  • 1 cup cold plain unsweetened almond or soy milk 
  • 2-4 tbsp pumpkin pie spice (to desired taste) 
  • 3 tbsp pumpkin puree
  • 3 tbsp maple syrup 
  • 1 tbsp vanilla extract 
  • ½ tbsp ground cinnamon 
  • 3 tbsp brown sugar 
  • 1 tsp salt 
  • Powdered sugar as needed 
  • French bread, sliced 
  • Berry Jam (whatever flavor you prefer, we used black currant jam) 
  • Vegan butter as needed 

And here’s how you make them! I promise it is SO easy.

  1. In a large bowl whisk together your vegan egg, cold milk, pumpkin pie spice, pumpkin puree maple syrup, vanilla extract, salt, cinnamon, and brown sugar until well combined.  Allow to sit for about 5 minutes to slightly thicken. 
  2. Cut your French bread into slices and dip them into the batter and hold over the bowl to drain off the excess. 
  3. Place the coated French toast slices into a preheated pan (over medium high heat) with enough melted butter to coat the bottom. 
  4. Cook each side for about 2-3 minutes until golden brown. 
  5. Cook your vegan bacon according to package instructions. 
  6. Once your French toast is ready, remove it from the pan and place onto a baking sheet.
  7. Place 1-2 slices of your smoked gouda cheese on each slice of bread, and quickly place under the broiler to melt. Once melted, add in your bacon and fold up your sandwiches. 
  8. Sprinkle powdered sugar over the top and serve with your berry jam. Can also serve with extra maple syrup!
