If any of you know me relatively well (which I’m hoping you do at this point), then you know Fantastic Mr. Fox is my FAVORITE movie of all time. Not only is the animation / puppets beyond amazing, it’s such a cute fall movie & makes me the dang happiest. One of the best parts of it though is all the food they make in the movie! Mainly these Mrs. Beans infamous Nutmeg Ginger Apple Snaps that seem to get everyone in trouble.
Now what exactly is a Nutmeg Ginger Apple Snap you ask? Honestly, I don’t fucking know. It’s food from a movie that you really only hear the name of, hear about how delicious they are, and get to see a fake version of. So I’m just riffing here- but I assume they are similar to a gingersnap cookie but more ginger-y & nutmeg-y, and they had a cute little apple slice on top in the movie, so after some experimenting, we ended up here.

These cookies require a lot of plant based butter, so I teamed up with Flora Plant Based Butter to create this amazing recipe! They make some pretty dang incredible plant based butter, in both unsalted & salted, and it is PERFECT for baking. If you want to check out more about their butters, go ahead and click here! You can also check them out on instagram here!

Here’s what you’ll need to make these babies! Most of the stuff you should have on hand if you bake often, and the rest is pretty easy to get!
- 2 cups Unsalted Flora Plant Based Butter softened
- 1/2 cup organic cane sugar
- 6 tablespoons brown sugar
- 2 tablespoons molasses
- 1 tablespoon fresh ginger root grated
- 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon grated nutmeg
- 1 pinch ground cloves
- 4 cups all-purpose flour
- 2 teaspoons cornstarch
- 1 pinch salt
- 4 gala apples
- Organic cane sugar or cake sparkles for sprinkling

And here’s how to make them! Again they’re super easy, and you can use a hand mixer or even just a rubber spatula & whisk if you don’t have a stand mixer.
- Preheat the oven to 325ºF. Line a baking sheet with parchment paper or a silpat.
- In an electric mixer fitted with the paddle attachment, cream the butter on medium speed until light.
- Add the cane sugar, brown sugar, molasses, grated fresh ginger, ground ginger, cinnamon, vanilla extract, nutmeg, and cloves and beat on medium speed until fully blended.
- In a medium bowl, sift together the flour, cornstarch, and salt. Add the flour mixture to the butter mixture in three parts, carefully and on low speed, until the ingredients are fully blended.
- Roll 2-3 Tablespoons of dough into balls and use your hand to flatten them on the prepared cookie sheet about 1/4 inch high and 2 inches apart. Slice the apples as thinly as you can and press slices firmly into the center of each cookie. Sprinkle coarse sugar evenly over cookies to coat, making sure to cover the edges.
- Bake 25 minutes or until the edges are golden. Remove from the oven and sprinkle with more sugar, if desired, and cake sparkles. Let cool a few minutes on the cookie sheet before moving to a cooling rack to cool completely.

And that’s it! They’re so easy, and are the perfect fall treat- especially if you’re going to watch the movie. Curl up on the couch with a cup of apple cider and a few of these cookies & you’re good to dang go. Just don’t let your cousin get stolen over some though *cough* looking at you, Ash *cough*.
If you make these, please make sure to tag myself @plvntfood & @floraplantus on instagram so we can see and share your beautiful recreations! I can’t wait to see you all making them & I hope you love them & this incredible film as much as I do. And thank you again to Flora for collaborating with me on this amazing recipe!
