Corn’d Beef, Egg, & Cheese Breakfast Sandwich with Whole Grain Mustard Aioli

Okay so if it isn’t clear by now… I have a stupidly huge obsession with breakfast sandwiches. I grew up eating them all the time (mainly from fast food spots), but they have just always been my favorite *comfort* food. Breakfast, lunch, or dinner- I’m always ready to have one. Today I wanted to create a spin on the classic bacon / sausage, egg, & cheese by swapping the meat portion for vegan corn’d beef. And y’all. It’s AMAZING. This is seriously one of the best breakfast sandwiches I’ve ever had, trust me.

These sandwiches are so easy to make, so here’s how to do so!

Ingredients-

  • Unreal Corn’d Beef (4-7 slices per sandwich) 
  • Just Egg Folded Egg Patties (1 per sandwich) 
  • Follow Your Heart Provolone Cheese (1 slice per sandwich) 
  • 1/2 cup vegan mayonnaise 
  • 1/4 cup whole grain mustard 
  • 1 tbsp hot sauce 
  • 1 tbsp garlic powder 
  • 1 tsp kosher salt 
  • 1 tsp black pepper 
  • Mixed Greens (1/4 cup per sandwich) 
  • English muffins, toasted (1 per sandwich) 

Instructions- 

  1. In a non-stick pan over medium heat, add in your corn’d beef to heat through. 
  2. Cook your egg patties according to package instructions and melt a piece of cheese on each one. 
  3. In a bowl, mix together your mayo, mustard, hot sauce, garlic powder, salt, and pepper. 
  4. Toast up your English muffins, add the whole grain mustard aioli to both top and bottom buns, then your greens on the bottom bun, corn’d beef on top, then your egg & cheese patty, and close with your top bun and a sandwich pick. 
  5. Dig in & Enjoy!
