Smoked Gouda, Caramelized Onion, & Arugula Grilled Cheese

It’s national panini day! What better way to celebrate then with the most insanely delicious grilled cheese ever?! I know grilled cheese is traditionally not considered a “panini”, but you can easily make this sandwich in a panini press & it’ll get even crispier and extra melty (which is always a plus!).

I’m really excited to announce that this recipe is in collaboration with Follow Your Heart! They’re one of my favorite brands, and I’ve gotten so many requests to make more recipes using their products from y’all, since they’re so accessible across the US. The products I used in this recipe are their Smoked Gouda Slices & Avocado Oil Vegenaise! They’re so dang good and really send this recipe over the top!

Here’s what you’ll need to make this insanely delicious sando!

  • Sourdough bread 
  • Follow Your Heart Avocado Oil Vegenaise 
  • Follow Your Heart Smoked Gouda Cheese Slices 
  • 3 large yellow onions, sliced into thin half-moons
  • Smooth Dijon mustard 
  • Arugula 
  • 4 tbsp vegan butter 
  • Salt & crushed red pepper to taste 

And here’s how to make it!

  1. Slice your onion and add it to a skillet over low heat with your vegan butter, salt, and crushed red pepper. Cook over low heat, stirring every 5-7 minutes, for about 45 minutes until the onions are jammy and fully caramelized.  Transfer them to a paper towel lined plated to absorb any excess grease once finished. 
  2. Take your sourdough bread and coat one side of each slice with some mayo.  Place the mayo side down in a skillet over medium low heat, and place 2 slices of smoked gouda on each slice of bread. Cover with the lid and allow to cook until the cheese is nice and melty. 
  3. Once the cheese is melted and the bread is browned, add a generous amount of caramelized onions, some arugula, and some Dijon mustard. Close up the sandwich and press down to seal it together.  
  4. Cut in half and serve!

Recipe Notes

You can also easily make this on a panini press!  It gets even crispier and extra melty that way 🙂
