Pepperoncini Pepper Queso with Spiced Pita Wedges

Pepperoncini Peppers are seriously one of my favorite foods. I put them on almost everything & can eat them straight out of the jar. Typically you see queso being made with jalapeños, so I decided to switch things up a bit and do more of a “Greek inspired” queso using these delicious peppers & paired them up with some spiced pita wedges. Trust me… you’ll fall in love so fucking fast.

I’m really excited to announce that this recipe is in collaboration with Follow Your Heart! They’re one of my favorite brands, and I’ve gotten so many requests to make more recipes using their products from y’all, since they’re so accessible across the US. The products I used in this recipe are their Mozzarella Slices & Shreds! They’re so dang good and really send this recipe over the top!

Here’s what you’ll need to make everything-

  • 2 packs Follow Your Heart Mozzarella Slices, cubed
  • 1 pack Follow Your Heart Mozzarella Shreds
  • 2 tbsp Follow Your Heart Avocado Oil Vegenaise
  • ½-1 cup unsweetened soy milk 
  • ¼ cup pepperonicini pepper brine 
  • ½ cup chopped pepperoncini peppers 
  • 1 tbsp garlic powder 
  • ½ tbsp salt 
  • 5-6 pitas, cut into wedges 
  • ¼ cup melted vegan butter 
  • 3 tbsp za’atar spice 

And here’s how to make it!

  1. Preheat your oven to 375F
  2. Cut your pita into wedges, and place on a baking tray. 
  3. Brush with melted butter, and sprinkle over za’atar spice & salt to taste.
  4. Bake for 10 minutes or so until just crispy and slightly golden brown.
  5. In a skillet over medium low heat, add your cheeses, soy milk (starting with less at first), pepperoncini peppers & brine, garlic powder, and salt.  Mix until melted. 
  6. Top the queso with some of the za’atar spice blend, and more peppers.  Serve with pita wedges.
