Before I was vegan & freshly moved to LA, In-N-Out quickly became a favorite of mine. Specifically their animal style fries! I’ve made vegan versions of them several times, but had the amazing idea to turn them into NACHOS instead and holy fuck are they to die for. Animal Style without the Animals is 10/10 the way to go.

Here’s what you’ll need to make these absolutely incredible nachos-

  • 1 bag tortilla chips 
  • 1 package Alpha Foods Beefy Plant Based Crumbles
  • 1 package vegan American cheese slices 
  • ¼-½ cup regular unsweetened soy milk 
  • Salt to taste 
  • 1 tbsp yellow mustard 
  • 1/3 cup shredded iceberg lettuce 
  • 1 medium yellow onion 
  • 2 tbsp vegan butter
  • Vegan thousand island 
  • Chopped hot chiles 

And here’s how to make them! You can also easily add some chopped tomato, and pickles as well if you wanna go full out- but I’m a baby and prefer just the lettuce on these guys so you really taste all the other amazing flavors going on here!

  1. In a skillet over medium heat, add your vegan butter.  Chop your onions & add those in when the butter is melted, along with a pinch of salt.  Cook stirring semi frequently as to not burn them, for about 15 minutes until caramelized.  Set aside.
  2. In a different skillet over medium heat, add a bit of oil along with your beefy crumbles. Once they start to brown add a pinch of salt and your mustard.  Cook until browned thoroughly. 
  3. In a saucepan over low heat, cube up your American cheese & add it along with your soy milk and a pinch of salt. Start with less milk and first and add more as the cheese melts until it reaches a queso consistency. 
  4. Add your tortilla chips to your serving platter & cover with your cheese sauce.  Then add your beef crumbles, caramelized onions, shredded lettuce, thousand island dressing, and chopped chiles & serve immediately.

If you want / need to make your own thousand island dressing, it’s equal parts vegan mayo, ketchup, yellow mustard, and sweet relish! Super simple.
