Spinach Artichoke Dip

I think for anyone, growing up Spinach Artichoke Dip was always a staple. Either at a family party, game day snack, or a popular appetizer at most restaurants… it’s always delicious. You know what makes it even better though? Having HANDHELD Pot Pies to dip into it. Trust me, it’s next level… and this dip is SO easy to veganize.

Here’s what you’ll need to make the dip!

  • 8 ounces room temp. vegan cream cheese
  • 1 cup vegan sour cream
  • 16 ounces frozen spinach, thawed & drained
  • 1 cup marinated artichokes, drained & chopped
  • 1 tbsp garlic powder
  • Salt / black pepper to taste
  • 2 tsp crushed red pepper
  • ½ cup vegan parmesan cheese
  • 1 ½ cups vegan shredded mozzarella cheese
  • Chips, crackers, etc. for dipping
  • 1 Alpha Foods pot pie per person (4-6)

And here’s how to make it! Trust me it’s so easy, you just mix everything in the same bowl, and then everything cooks in the oven!

  1. Thaw and drain your spinach incredibly well, and drain your artichokes and chop them finely.
  2. In a bowl, mix together your room temp. cream cheese, sour cream, spices, and half of your cheeses. 
  3. Add in the spinach and artichokes and mix again.
  4. Transfer into a greased baking dish & top with the remaining cheeses.
  5. Place into a 400F preheated oven for 30 minutes, then broil until the cheese browns and finishes melting & the sides of the dip are bubbling.
  6. Cook your pot pies according to package instructions & cut in half.
  7. Serve your dip with the pot pies, and chips for dipping.
