Crispy Chik’n Banh Mi

Banh Mi’s are seriously some of my favorite sandwiches. They’re tangy, crunchy, refreshing, spicy, and 10/10 delicious. But making it with a Crispy Chik’n Patty? Trust me it levels it up by 9,000%.

Alright, here’s what you’ll need to make them!

Pickled Daikon & Carrots:

  • ¼ large daikon radish
  • 1 large carrot
  • 1 cup hot water
  • 1 cup white vinegar
  • 1 tbsp salt
  • 2 tbsp sugar

Sriracha Scallion Aioli:

  • ½ cup vegan mayonnaise
  • 4 tbsp sriracha (adjust to your liking)
  • Small pinch of salt
  • 1 tbsp rice vinegar
  • ¼ cup chopped scallions

Other Sandwich Ingredients:

  • Sesame Seed Buns (either 2 or 3 depending how many sandwiches you’re making)
  • 1 pack of Alpha Foods Crispy Chik’n Patties
  • Sliced cucumber
  • Sliced fresh jalapeno
  • Large handful of cilantro

And here’s how to make them! They’re so easy, especially if you make the pickled daikon & carrot, as well as the aioli the day before!

Pickled Daikon & Carrots:

  1. With a vegetable peeler, peel your carrot & daikon, and then peel into “ribbons”.  Cut the ribbons in half length wise and add to a bowl.  You can also grate these on the largest setting of your box grater instead of doing ribbons once peeled if you desire. 
  2. Add your hot water over the vegetables, then your vinegar, salt, and sugar.  Mix well to combine, cover with a lid or foil, and let sit on the counter for at least 20 minutes.  Ideally you’d do this the night before and put them in the fridge overnight to pickle further. 

Sriracha Scallion Aioli:

  1. Place all ingredients in a bowl & mix until well combined.  Adjust sriracha to your liking.  Keep covered in the fridge until ready to use.

Sandwich Assembly:

  1. Cook your Alpha Foods Crispy Chik’n Patties according to the package instructions (oven method is preferred here).
  2. Cut your sesame buns in half & toast them if you desire to (we left ours untoasted). 
  3. For a double patty sandwich- layer some aioli on the bottom bun, then a chik’n patty, then some of the pickled daikon & carrot ribbons, then another chik’n patty, then cucumber slices, jalapeno slices (to your liking), fresh cilantro, more aioli & your top bun.
  4. If you’re making a single patty sandwich do the same thing just skip the adding the second patty step!
  5. Place a sandwich pick in to hold it all together, and enjoy!

Super easy, super delicious, and the perfect way to dress up some frozen Chikn Patties. Trust me nobody would ever guess it was frozen after you serve them this!

This Crispy Chik'n Banh Mi is the perfect summer sandwich! Crispy, tangy, fresh, and ALL VEGAN!

Ingredients

Pickled Daikon & Carrot
