I know a lot of people don’t have the luxury of making super crazy breakfasts every morning, but this makes such a ‘fancy’ breakfast (that you can easily meal prep) that takes under 20 minutes to make! All thanks to the Alpha Foods Frozen Breakfast Burritos.

This post is sponsored by Alpha Foods! If you haven’t heard of them, now you have! They make some of the MOST AMAZING frozen vegan products on the market, ranging from frozen burritos, tamales, pot pies, etc.- to chicken nuggets, and other vegan meats. And the quality is top notch. Even their frozen burritos when microwaved hold together, don’e explode, and the tortilla never gets that weird rubbery texture- plus they’re actually LOADED with filling.
You can find their products here https://alphaplantbased.com/, and I just want to give a huge thanks to Alpha for collaborating with me on this post and many more to come! I’m so excited to show y’all how easy it is to upgrade these frozen items into full blown meals.

Here’s what you’ll need to make everything!
- 2 Alpha Foods Breakfast Burritos
- 3-4 large red potatoes
- 2 tsp each of smoked paprika, garlic powder, onion powder, ground mustard, black pepper, salt, dried oregano, and cayenne pepper
- 4 tbsp vegan butter
- Hot sauce to taste *optional
- 1 cup rolled oats
- 2 ¾ cup filtered water
- Coffee
- Cinnamon to taste
- 1 date pitted

And here’s how to make everything!
- Start with your oat milk so it can chill in the fridge. In a blender, add your oats, water, pitted date, cinnamon, and a small pinch of salt. Blend until completely smooth. Strain through a fine mesh sieve or nut milk bag & transfer to a container with a lid. Place in the fridge until cool. You can do this the day before for best results, and make sure to shake well before using.
- For the potatoes, cube them up into small chunks. Add your vegan butter to a pan over medium heat until melted, then add in your potatoes and smoked paprika, garlic powder, onion powder, ground mustard, black pepper, salt, oregano, cayenne, and a few drops of hot sauce. Mix around until everything is combined, then cook for 10 minutes until the potatoes just start to brown.
- At this point, cover your potatoes with a lid and let them steam for another 10 minutes until fork tender. Remove the lid, adjust seasonings if necessary, and cook again for another 10 minutes until the crisp up.
- Cook your Alpha Foods breakfast burritos according to package instructions. Serve them alongside your potatoes with some hot sauce on the side, and then pour some of your cinnamon oat milk into hot or iced coffee (or some chai tea). That’s it!

Super easy, super delicious, and the perfect way to dress up some frozen breakfast burritos. Trust me nobody would ever guess it was frozen after you serve them this!
Once again I want to give a big thank you to Alpha Foods for sponsoring this post and allowing me to create some really amazing recipes for you guys.
