Chicken Katsu Curry

Chicken Katsu is one of my favorite things, and I’ve made it so many ways. Using tofu, homemade seitan, plain vegan chicken, etc.- but I seriously found the EASIEST way to make it, and you’ll be just as stoked as I am, I’m sure of it. All you need to do is use a breaded vegan chicken patty! The frozen ones! Heat it up, make a curry sauce & rice (and any veggies you’d like), and oh my fucking god it is so amazing for something that takes roughly 10 minutes to make total.

Heres what you’ll need to make everything! It honestly is so easy and we’re amping things up by making a super aromatic tonkatsu curry sauce and fragrant rice.

  • 2 Alpha Foods Chikn Patties
  • 2 servings of long grain white rice
  • 1 tbsp vegan butter
  • 3 green cardamom pods
  • 2 whole cloves
  • Salt to taste
  • Broccoli steamed
  • Scallions thinly sliced
  • White sesame seeds
  • 1/3 cup Japanese curry paste
  • 3 cups water
  • ½ tbsp soy sauce
  • ½ tbsp rice vinegar
  • ¼ tbsp toasted sesame oil
  • ½ tbsp coconut sugar

And here’s how to make it!

  1. For your tonkatsu curry sauce, in a saucepan over medium-low heat add your water, soy sauce, rice vinegar, toasted sesame oil, coconut sugar, Japanese curry paste, and salt to taste. Whisk until everything is mixed through and cook over a low simmer for 5-10 minutes.
  2. For the rice, cook your rice according to the package instructions, but add in your vegan butter, and whole cardamom pods, cloves, and salt to taste before covering the pot with the lid. Allow to sit covered with the heat off for 15 minutes after finished cooking, then fluff with a fork.
  3. Cook your Alpha Foods Chikn Patty in the oven according to package instructions.
  4. Place your rice in a small bowl, packed tightly, and flip into your serving bowl. Pour in some of your tonkatsu sauce on the bottom, slice up your chikn patty and place it on top. Garnish with scallions and seasame seeds and serve with steamed broccoli (with smoked salt and sesame seeds) on the side. Enjoy!
