Beefy Cheddar Pot Pie with Tabasco Gravy, & Roasted Garlic Mashed Potatoes

I know during quarantine everyone is looking for ways to elevate their freezer / pantry staples… and with the addition of a few fresh ingredients, this meal will have your normal “tv dinners” looking like garbage. Homemade roasted garlic mashed potatoes & a tabasco gravy, accompanied by an Alpha Foods Beefy Cheddar Pot Pie & some charred broccolini? Say no more!

Let’s start with the Tabasco Gravy! It’s SO delicious, has a nice kick, a vibrant color, and goes perfectly with a multitude of things besides just this meal. Here’s what you’ll need, and how to make it!

  • 4 tbsp vegan butter
  • 4 tbsp all purpose flour
  • 4 cups veggie stock
  • 3-4 tbsp tabasco hot sauce
  • 1 tbsp vegan Worcestershire sauce
  • Salt / pepper to taste
  • 1 tbsp Dijon mustard
  1. In a skillet over medium heat, melt your butter.  Once melted add your flour and mix well until combined. 
  2. Slowly add in your veggie stock, whisking constantly to prevent lumps.  Then add in your tabasco, Worcestershire sauce, Dijon mustard, & salt / pepper to taste. 
  3. Bring to a boil, then reduce to a simmer and allow to cook (whisking frequently) until you’ve reached your desired thickness.

Homemade mashed potatoes really beat most anything you can make in the kitchen. But adding in roasted garlic? Man oh man, sign me right up! These are so easy to make, and trust me you’ll be just as addicted as I am (especially with that spicy gravy on top!). Here’s what you’ll need and how to make them!

  • 2 heads roasted garlic
  • 4 pounds russet potatoes, peeled
  • 1-3 cups regular unsweetened plant milk
  • 6 tbsp vegan butter
  • Salt / pepper to taste
  • 3 sprigs fresh thyme
  1. Peel and boil your potatoes in salted water until fork tender.
  2. Roast your garlic heads and allow to cool for 20 minutes.
  3. Warm your plant milk with your sprigs of thyme gently in a saucepan.
  4. Once the potatoes are cooked, drain, then begin to mash.  Add in your roasted garlic, cold cubed butter, salt / pepper to taste, and warm milk and continue to mash until you reach your desired thickness. 

Once you have your mashed potatoes & gravy ready, all you have to do is serve everything up! Just cook your pot pie according to the package instructions (I prefer the oven because it gets nice and crisp), and char up some broccolini in olive oil with salt, pepper, lemon juice, and garlic powder over high heat in a skillet. Serve those up along sides the mash and gravy and boom! A super delicious meal that uses mostly pantry & freezer staples to get the job done.

But like I said- that’s it! Super easy, super delicious, and the perfect way to dress up some frozen pot pies. Trust me nobody would ever guess it was frozen after you serve them this full plate!

Ingredients

Tabasco Gravy

  • 4 tbsp vegan butter
