Yesterday I did a live instagram takeover with Alpha Foods & the recipe was such a success I decided to post the recipe here for y’all incase you missed it! It’s something great for the current time during quarantine because it’s elevating a frozen food item & pantry staples to make something absolutely delicious. We took their new breakfast burritos, coated them in a spiced vegan butter & grilled them, and made a jalapeno crema to go with… trust me, they’re delicious.

Here’s what you’ll need to make them!

Spiced Butter-

  • ½ cup vegan butter
  • 2 tsp each smoked paprika, garlic powder, cumin
  • Salt to taste

Jalapeno Crema-

  • ½ cup vegan sour cream (can also use plain yogurt, vegan mayo, or blended silken tofu)
  • 1/8-1/4 cup chopped pickled jalapenos (use more or less depending on how spicy you like it)
  • 1 tsp garlic powder
  • ½ tsp each smoked paprika, dried oregano, cumin
  • Salt to taste
  • 2 tbsp pickled jalapeno brine
  • 2 tbsp fresh cilantro, finely chopped

Misc. Ingredients

  • 2 Alpha Foods Burritos (I used the breakfast burritos)
  • Any toppings you’d like (I used radish and cilantro)

And here’s how you make them!

  1. Cook your burritos according to package instructions, If cooking in the oven cook for 2 minutes less than the package instructs you to.
  2. In a saucepan over medium heat add your spiced butter ingredients, as soon as the butter melts turn the heat to low.  Allow to cook for at least 5 minutes on low, stirring frequently to prevent burning.  Then turn off the heat until ready to use.
  3. In a small mixing bowl, add all of your jalapeno crema ingredients and mix very well.  You can adjust the spices and amount of jalapenos to your liking. 
  4. Heat a grill pan (you can also use a panini press, George foreman grill, actual grill, etc.) over medium heat.  Brush one side of each of your burritos, generously, with your spiced butter mixture, and place that side down on the grill pan.  Then brush the other side with the remaining butter.  After about 1-2 minutes and some nice grill marks form, flip the burrito & cook until grill marks are formed on the other side.
  5. Cut your burrito on a bias, spoon some crema down onto your plate, place the burrito on top, and garnish with a little more crema, sliced radishes, and cilantro. 

But like I said- that’s it! Super easy, super delicious, and the perfect way to dress up that frozen tamale. Trust me nobody would ever guess it was frozen after you serve them this full plate! And it’s the perfect thing to celebrate national tamale day (or really any day let’s be honest here).

These Spiced Burritos with Jalapeno Crema are the perfect way to elevate any frozen vegan burrito!

Ingredients
