I know with the quarantine going on, a lot of y’all are having a hard time finding lots of fresh produce or ingredients, but have a lot of pantry staples and frozen items on hand. Luckily, this dish uses mainly all canned goods & frozen products- besides the garnish! It’s super easy to make, like who knew you could turn frozen burritos into enchiladas?

Alright, let’s talk ingredients. Here’s what you’ll need-

  • Green enchilada sauce
  • Red enchilada sauce
  • Vegan mole sauce
  • 6 Alpha Foods burritos
  • 1 cup plain vegan yogurt
  • ½ fresh jalapeno
  • 1 tbsp pickled jalapeno brine
  • Salt / pepper to taste
  • 1 cup vegan jack cheese
  • Thinly sliced radish & serrano pepper
  • Fresh cilantro
  • Lime wedges

You can use any flavor Alpha burrito that you’d like for this, I used the Chick’n Fajita, but trust me pretty much all of them will be good here! And for the enchilada sauces, I hopped on over to my local Mexican market and picked up a can of pre-made green, red, and mole, enchilada sauce. Just double check the ingredients to make sure they’re vegan (most of the time they are!), but you can also make your own if you’d like! You can even use salsas for this if you can’t get your hands on enchilada sauce.

Like I said, these are super stupid easy to whip up given that 90% of the ingredients are frozen or canned. Basically you just have to dump everything in a pan, bake, and then garnish at the end!

  1. In a baking dish, arrange your burritos in a line next to each other. 
  2. Cover 1/3 of the burritos with red sauce, 1/3 with green sauce, and 1/3 with mole sauce.  Then cover with vegan jack cheese and bake according to the alpha foods oven instructions on the package, but add an additional 4 minutes.
  3. To make the jalapeno crema, in a blender add your yogurt, jalapeno, brine, and salt / pepper & blend until smooth.
  4. Once the burrito enchiladas are ready, drizzle with jalapeno crema, top with thinly sliced red radish and serrano peppers, fresh cilantro, and serve with lime wedges.

You can use any garnish you’d like- hot sauce, sour cream, the jalapeno crema shown here, radish, cilantro, serrano peppers, pickled jalapenos, chipotle aioli, scallions… the list goes on! It’s really all up to your preferences and what you can find in stores right now. If you’re looking for a shelf-stable option, I’d say garnish with pickled jalapenos & maybe some chipotle vegenaise.

But like I said- that’s it! Super easy, super delicious, and the perfect way to dress up some frozen burritos. Trust me nobody would ever guess it was frozen after you serve them this full plate!
