Chicken Verde Tamales with Patatas Bravas & Chile Lime Black Beans

Happy National Tamale Day! What better way to celebrate than to show you how to jazz up a frozen vegan tamale into one extremely delicious meal that nobody will ever guess has a frozen food component. Dress that frozen tamale up with some patatas bravas & chile lime black beans, and you’re good to fucking go!

Let’s start with the sides! If you’ve never had Patatas Bravas they’re so good. It’s basically roasted potatoes with a red sauce, and crema! Super easy & super delicious. Here’s how you make them!

  • 4-5 large red potatoes, diced with skin on
  • 4 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • Salt / pepper to taste
  • ½ tsp cayenne pepper
  • 2 cups red enchilada sauce
  • 1 ½ cans chipotle peppers in adobo
  • Juice of half a lime
  • Small handful of cilantro
  • 2 garlic cloves
  • ½ cup plain unsweetened vegan yogurt
  • 3 tbsp finely chopped cilantro
  • 1 wedge of lime juiced
  1. Preheat your oven to 400F
  2. Dice your potatoes, skin on, and in a large bowl toss with 4 tbsp olive oil, chili powder, cumin, salt / pepper to taste, and cayenne. 
  3. Spread evenly on a baking sheet and bake for about 30 minutes or until the potatoes are fork tender & slightly browned.  Flip frequently.
  4. For the sauce, blend your red enchilada sauce, & garlic cloves, with the chipotle peppers & adobo in the can.  Add as many chipotle peppers to your desired spice level. Once blended, blend in your cilantro, salt to taste, and lime juice. 
  5. When the potatoes are ready, add back to the bowl you initially tossed them in & add in some of your sauce.  Toss to combine. 
  6. Mix your yogurt, cilantro, lime juice, and salt to taste and drizzle over top of the potatoes. 

These Chile Lime Black Beans are so dang delicious, I make them all the time! They’re super easy & I also make a huge batch to keep in the fridge for easy eating.

  • 2 cups drained and rinsed black beans
  • ½ cup vegetable broth
  • Juice of 1 lime
  • 1 tbsp chili powder
  • Salt / pepper to taste
  • Crumbled firm tofu for topping
  1. Add all of your ingredients besides the tofu to a sauce pot over medium heat and cook until warmed through.  Drain out the liquid & top with crumbled tofu to resemble queso fresco. 

Once you’ve got your sides ready, all you have to do is cook your Alpha Foods Tamale(s) according to package instructions, place on a plate with some of the patatas bravas, black beans, pico de gallo, guacamole, lime wedges, and some fresh cilantro.  And that’s it! A super hearty & delicious meal that nobody would guess started out partially frozen.

But like I said- that’s it! Super easy, super delicious, and the perfect way to dress up that frozen tamale. Trust me nobody would ever guess it was frozen after you serve them this full plate! And it’s the perfect thing to celebrate national tamale day (or really any day let’s be honest here).

Ingredients

  • Alpha Foods Chikn Verde Tamale
  • Pico de Gallo
  • Guacamole
  • Cilantro
  • Lime Wedges

Patatas Bravas

*the side dishes serve 4, but in order to make everything serve 4, cook 1-2 tamales per person!
