Cheesy Guinness Corned Beef Garlic Bread

Looking for something different to make for St. Patrick’s Day this year that’s sure to impress anyone you’re making it for? Y’all KNOW I got you. This fucking CHEESY GUINNESS CORNED BEEF GARLIC BREAD is what the fuck is up, trust me. I know it might sound weird… but it’s absolutely delicious, have fun not eating the whole loaf yourself.

I’m really excited to announce that this recipe is in collaboration with Follow Your Heart! They’re one of my favorite brands, and I’ve gotten so many requests to make more recipes using their products from y’all, since they’re so accessible across the US. The products I used in this recipe are their Cheddar Shreds and Medium Cheddar Slices. They’re so dang good and really send this recipe over the top!

Here’s what you’ll need to make this bread!

  • 2 cloves garlic, minced
  • 5 tbsp vegan butter
  • 2 tbsp minced chives
  • salt to taste
  • 1/4 cup Guinness draught
  • 1/2 small head of green cabbage, sliced thinly
  • 1 cup follow your heart cheddar shreds
  • 1 package follow your heart medium cheddar slices
  • 2 packs vegan deli style ham slices
  • 4 tsp vegan Worcestershire
  • 4 tsp dijon mustard
  • 1 large loaf crusty vegan bread

If you can’t find their medium cheddar slices you can just use extra cheddar shreds, or american slices on top! Also make sure you’re using the vegan Guinness Draught Beer (some of their beers are not vegan!). I also used the Kroger Brand Simple Truth Deli Style Ham slices, but any you can find will do the trick! Even roast beef, salami, or turkey style slices will work as well 🙂

This bread is honestly so easy to make, trust me. And if you’re gonna be drinking on St. Patrick’s Day as most of the US does (let’s be honest here, in America it’s an excuse for people to drink, haha), it’s super quick and easy to make. Nothing too complicated!

  1. Preheat the oven to 400 degrees
  2. Cut the bread in half lengthwise so you have two long pieces. On the cut side of each piece of bread, take a knife and NOT going all the way through, cut large X’s into the bread “meat” this allows for the flavors to penetrate the bread more. Place on a large baking sheet and set aside.
  3. Heat a 12-inch pan over medium heat, sauté the garlic in a bit of vegan butter for 30 seconds or until fragrant. Add remaining butter, stir until melted, then add chives and off the heat.
  4. Evenly brush the garlic chive butter onto each cut side of the bread, make sure you get all the garlic out of the pan and turn the pan back on to medium-high heat. Add the deli ham and sauté for 3-4 minutes or until most of the pieces are slightly browned, be careful not to overcook or it will get rubbery. Add the Worcestershire & Dijon and sauté for another minute. Remove and place on a plate to the side. Add the cabbage to the pan with a little oil or butter and sauté 7-10 minutes or until softened.
  5. Evenly and slowly pour the Guinness onto the bread, sprinkle with the cheddar shreds.  Place in the oven for 10 minutes until the cheese is melted.
  6. Add ham and cabbage, then finish with the medium cheddar slices.
  7. Place in the oven for 15 minutes, then broil for 5 minutes, slice into 2-inch pieces to serve with fresh chives on top.
