PB&J Chia Pudding Parfaits

I know what you’re thinking… Bri’s making something healthy for once? Yes. Yes I am. These PB&J Chia Pudding Parfaits are so creamy, nostalgic, and absolutely delicious you will be OBSESSED after your first bite. With layers of strawberry chia pudding, strawberry jam, fresh strawberries, peanut butter, and roasted peanuts… how could you go wrong?!

I’m really excited to announce that this recipe is in collaboration with Follow Your Heart! They’re one of my favorite brands, and I’ve gotten so many requests to make more recipes using their products from y’all, since they’re so accessible across the US. The product I used in this recipe is their Strawberry Yogurt. It’s so dang good and really sends this recipe over the top!

Heres what you’ll need to make these-

  • 1 cup black chia seeds
  • 3 cups unsweetened oat milk (or any plant milk of choice)
  • 1 container Follow Your Heart Strawberry Yogurt
  • 3-6 tbsp maple syrup (adjust according to your desired sweetness)
  • 1 tbsp vanilla extract
  • Strawberry jam
  • Peanut butter
  • Fresh strawberries
  • Roasted and unsalted peanuts

I like using strawberry because that’s my favorite “peanut butter and jelly” flavor, but you could use their blueberry yogurt / blueberry jam / fresh blueberries, etc! Change it up based on your personal preference!

Here’s how to make them-

  1. In a 32-ounce mason jar, add your chia seeds, oat milk, yogurt, maple syrup, and vanilla extract.  Shake very well until combined and place in the fridge overnight to thicken. 
  2. Once the chia seed pudding is ready, in a jar, layer your pudding, then jam & fresh strawberries, more pudding, then peanut butter and roasted peanuts, and continue until the jar is full! 

See I told you, I promise it’s sooooo easy to make & that you’ll fall in love instantly.  Like. Super fucking instantly.
