I used to looooove Chicken Cordon Bleu before I was vegan. So much so that I used to make it multiple times weekly. Since going vegan, I haven’t really had it since- but wanted to recreate it in a more creative way. And I don’t know about you, but anything that’s sandwiched between a fluffy Brioche Bun is A+ to me! This Chicken Cordon Bleu Sandwich is seriously game changing, you’ll fall in love instantly (especially once you know how easy it is!).

This recipe stars the Gardein Crispy Chick’n Patties. Chicken Cordon Bleu is typically a breaded chicken cutlet stuffed with ham & Swiss cheese, so these work great for a sandwich version! They’re absolutely delicious, easily accessible, and cook up super quick! I’m super happy to be working with Gardein to bring you this amazing recipe.

First though, lets make some honey mustard, shall we?! I used to always serve mine with honey mustard, so figured it’d be the perfect sauce for this sandwich. Just mix equal parts smooth dijon mustard and agave nectar (or less agave if you don’t like it as sweet), and season with salt & pepper! If you want to make it extra creamy, mix in a little vegan mayo as well! This sauce is great for a multitude of things and keeps well in the fridge, covered in a jar, for quite a while!

Cook up your Gardein Chick’n Patty according to the package instructions, I recommend the oven instructions compared to the microwave one so that it gets nice and crispy. In the last 5 minutes of baking, put 2 slices of vegan Swiss cheese on top of the patty to let it melt! I used Daiya Swiss here, but you could also use provolone, smoked gouda, mozzarella, etc.

Once the Chick’n Patty is ready and the cheese is melted, place some slices of vegan deli ham (I used Tofurky) over top, with another slice of Swiss on top. Place under the broiler to crisp up the edges of the ham and melt the top slice of cheese! Take out of the oven and allow to cool for about a minute. While its cooling, take a vegan brioche bun and broil that as well, until golden brown and toasty.

Once everything is ready, all you have to do is assemble! Take the bottom half of your bun, and add your Chick’n patty / ham / cheese right onto it. Spoon over a healthy serving of the honey mustard, and close with your top bun! You can always add lettuce, tomato, onion, etc. to this, but I wanted to keep it simple & trust me it is soooo good.

  • Gardein Crispy Chick'n Patties
  • Tofurky Deli Ham Slices
  • Daiya Swiss Cheese Slices
  • Vegan Brioche Buns
  • 1/2 cup dijon mustard
  • 1/4-1/2 cup agave
  • 2 tbsp vegan mayo *optional
  • salt / pepper to taste


  1. Cook your Gardein patty to package instructions in the oven. In the last 5 minutes of cooking, place 2 slices of cheese on top so they can melt.

  2. Make your honey mustard by mixing together your dijon, agave, salt / pepper, and some vegan mayo if you want to make it extra creamy. Set in the fridge, covered, until ready to use.

  3. Once your chick'n is ready, take it out of the oven and top with some ham slices, then another slice of cheese. Place back into the oven on broil until the edges of the ham are crispy and the cheese is bubbly and melted. Also broil your bun until golden brown on the inside.

  4. Take your bottom bun, spread some honey mustard, then add your chick'n / ham / cheese, and top with more honey mustard & the top bun. You can add lettuce, tomato, red onion, etc. but I recommend just keeping it simple!
