Sausage & Rotel Queso

Growing up, at any party or sports game, etc. we used to always have this sausage queso. It basically required very few ingredients, a huge brick of velveeta cheese, rotel, and jimmy dean hot sausage. I remember it being SO dang good, and figured it can’t be that hard to make vegan- and let me tell you, it’s so fucking easy and tastes exactly like I remember! With the Super Bowl coming up, I figured it’d be a perfect time to publish this recipe, since it’s what we always had at every Super Bowl party!

I’m really excited to announce that this recipe is in collaboration with Follow Your Heart! They’re one of my favorite brands, and I’ve gotten so many requests to make more recipes using their products from y’all, since they’re so accessible across the US. The product I used in this recipe are their American & Medium Cheddar Style Slices. They’re so dang good and really sends this recipe over the top! The combination of the two really replicates that “velveeta” flavor.

Here’s what you’ll need to make the Queso-

  • 2 packages of Medium Cheddar Follow Your Heart Slices
  • 2 packages of American Follow Your Heart Slices
  • 1 ½ cans hot rotel tomatoes & chiles can use mild if you want
  • 1 can diced green chiles
  • 1/3 cup diced pickled jalapenos
  • 3 tbsp pickled jalapeno brine
  • 4 links of hot Italian beyond sausage casing removed
  • Oil for cooking
  • 1-2 cups regular unsweetened almond milk
  • Salt to taste
  • Cilantro for garnish
  • Tortilla Chips & Fuego Takis for dipping

If you can’t find these specific flavors of Follow Your Heart Slices, any type of vegan cheddar or American cheese will do the trick! Regardless of it’s in shred or slice form, they’ll still get the job done. But I definitely recommend this combo if you’re able to find it! Also the Fuego Takis are vegan for all of those who don’t know! And not that I traditionally dipped those into this queso growing up or anything, but I highly recommend them now! They’re so good with this, trust me.

Heres how to make the queso-

  1. In a pot, cube up your cheese slices and add those in with your rotel, green chiles, jalapenos, jalapeno brine, salt to taste, and almond milk. Add a less almond milk at first, and add more as needed (start with about ¾ cup) as it melts.
  2. In a skillet, add some oil and crumble in your sausage & cook for 5-7 minutes over medium heat until browned. Then add into the queso.
  3. Melt the queso over medium heat, stirring frequently & add more almond milk as needed- but remember, this should be thick!
  4. Once the queso is melted and ready, add to a serving bowl, top with some fresh cilantro, and serve with tortilla chips and takis for dipping.

You can also make this in a crockpot!  Just brown your sausage in a skillet before adding to the crockpot with the rest of the queso ingredients- but then cook on high for 3 hours or low for 6 hours, stirring every so often!  Also if you can’t find Rotel (it’s sold at most “normal” grocery stores, but you won’t find it at Whole Foods or Trader Joes), you can use cans of Diced Fire Roasted Tomatoes & Just add 1 extra small can of Diced Green Chiles per can of Tomatoes!

Who doesn't fucking love queso? This VEGAN Sausage & Rotel Queso brings me right back to my childhood when my family would make something similar for football games or parties. It's super easy, super delicious, and is bound to be your new bff in the kitchen.
