Cheddar Bay Biscuits

Okay so growing up in Western New York, we ate at a LOT of chain restaurants. But one of the ones we frequented most often was Red Lobster (always my Grandma’s pick), and I was never a huge seafood fan, but boy was I a Cheddar Bay Biscuit fan. I’d literally eat the entire basket of them. I’ve wanted them so bad since going vegan and have tried out a few recipes that were just meh… but FINALLY perfected them for y’all. And let me tell y’all… they’re fucking perfect. Amazing. So damn delicious. Let me show you how easy they are to make!

For the Biscuits-

  1. Preheat your oven to 475F and line a baking tray with parchment paper 
  2. In a mixing bowl, whisk together your flour, baking soda, baking powder, sugar, salt, garlic powder, and old bay seasoning. Set aside. 
  3. In a small mixing bowl, combine your melted butter, almond milk, and lemon juice.
  4. Add the wet mixture to the dry mixture and using a spatula, mix until JUST combined. Seeing some flour swirled through is ideal! 
  5. Add your vegan cheddar cheese & fold in until just combined. 
  6. Using a greased 1/4 cup measuring cup, scoop out the batter and plop them onto your parchment lined baking tray. 
  7. Bake for 12-15 minutes, until golden brown. Remove from the oven. 

For the Topping-

  1. Melt your vegan butter in a small bowl and mix in your minced garlic. 
  2. Once the biscuits come RIGHT out of the oven, brush over some of the garlic butter, and top with chopped fresh parsley. 

And that’s it! I told you, sooooo fucking easy. And seriously, good luck not eating the entire batch in one sitting. These are the perfect side to almost any meal, you can make them a little bigger if you want and use them to make breakfast sandwiches with, or are just damn good on their own.

Ingredients

Biscuits

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp organic cane sugar
  • 3/4 tsp salt
  • 3/4 tbsp garlic powder
  • 1 1/2 tsp old bay seasoning
  • 1 cup regular unsweetened almond milk
  • 8 tbsp vegan butter *melted
  • 1 tbsp lemon juice
  • 1 – 1/2 cups shredded vegan cheddar cheese

Topping

  • 4 tbsp vegan butter *melted
  • 2 tbsp finely minced garlic
  • fresh chopped parsley
