Looking for an easy way to use up those holiday leftovers? I’ve got you covered! This Chicken & Cranberry Panini is SO easy to make, so versatile, and most importantly… so delicious.
The two main components of this sandwich are my Sriracha Cranberry Sauce & Herbed Chicken Patties. You can find the recipes for both here:
Once you have those made (which you can easily make just for this sandwich, but if you make them for your holiday dinner- you should have some extra leftover!) all you have to do is assemble the sandwich!
I used The Abbot’s Butcher Premium Chopped Chicken in the Herbed Chicken Patties for this dish, because it works PERFECTLY for this & adds so much amazing flavor to the dish. Plus its so easy to cook up, and is made with actual whole food ingredients so it’s a plant based alternative I don’t feel bad about eating regularly. They’re sold all over Los Angeles, but also are carried through a few online vendors that ship nationally as well. You can find all of the information on their website & Instagram!
Once you have everything ready, toast up your bread all nice, then spread a healthy amount of sriracha cranberry sauce onto each slice. Add one of your herbed chicken patties, some sliced red onion, and mixed greens. You can also add any other leftovers you have from holiday dinner into this sandwich, or really any other veggies that you’d like! I also love to serve mine with a mixed greens, cucumber, and balsamic vinaigrette salad.
And that’s it! SUPER easy, right?! This is amazing for the holidays, or honestly any time during the next couple months. Chicken & Cranberry Panini
This VEGAN Cranberry & Chicken Panini is the perfect way to use up any holiday leftovers.
- Ezekial Bread toasted
- Sriracha Cranberry Sauce *
- Herbed Chicken Patties *
- Sliced Red Onion
- Mixed Greens
Toast your bread well, then spread a thick layer of sriracha cranberry sauce on each slice.
Add a chicken patty, some mixed greens, sliced red onion, and close up your sandwich. Slice in half & serve with a side salad if desired.
