Thai Basil Beef

Yeah I know… we all love ordering out. But as a vegan, sometimes getting the things you crave just aren’t possible, or end up being so expensive with delivery. Making this Thai Basil Beef is perfect for those nights you’re craving take out & want something quick and easy!

I used The Abbot’s Butcher Premium Ground Beef for this bowl, because it works PERFECTLY for this & adds so much amazing flavor to the dish. Plus its so easy to cook up, and is made with actual whole food ingredients so it’s a plant based alternative I don’t feel bad about eating regularly. They’re sold all over Los Angeles, but also are carried through a few online vendors that ship nationally as well. You can find all of the information on their website & Instagram! 

Add your coconut oil to a skillet over medium heat, & add your scallions, minced ginger, minced garlic, and some salt & cook until fragrant. Then add in your ground beef, matchstick carrots, tamari, hoisin sauce, rice vinegar, coconut sugar, sriracha, and more salt / pepper to taste.  Cook over medium heat until the sauce thickens, and the beef slightly browns / the carrots are tender.  Right before serving add in your fresh basil & stir to combine & wilt slightly.  

Add on top of some cooked brown rice, and top with some more fresh basil, and red jalapenos if desired.  You can also put this between a burger bun as a sandwich… think of it like an asian style sloppy Joe? Put it over some mixed greens & quinoa, a bed of roasted veggies, the list goes on and on. It’s super versatile, really quick to whip up, and makes great leftovers!

Ingredients

  • 1 package Abbot’s Butcher Ground Beef
  • 1 ¼ cups carrots cut into thin matchsticks / shredded on a grater
  • ½ cup scallions both white and green parts
  • Salt / pepper to taste
  • 1 ½ tbsp minced ginger
  • 1 ½ tbsp minced garlic
  • 1 cup fresh basil chopped
  • 4 tbsp tamari
  • 2 tbsp vegan hoisin sauce
  • 2 tbsp rice vinegar
  • 1 tbsp coconut sugar
  • 3-4 tbsp coconut oil
  • 1-2 tbsp sriracha
  • Brown rice
  • More fresh basil for garnish
  • Red jalapenos for garnish

Instructions
