Sausage, Egg, & Cheese Breakfast Sandwiches

Who doesn’t love a good fucking breakfast sandwich? I know I do, and I know y’all know I do since I swear I post a new one every month. But THIS ONE. THIS ONE YOU GUYS. IT’S REALLY FUCKING IT OKAY. Crispy Breakfast Sausage Patties, Peppered Scrambled Egg, Cheddar Cheese, Mixed Greens, MF PRETZEL BAGELS, and a Maple Chipotle Aioli ???? Excuse me ???? Seriously y’all will be obsessed. Plus it’s National Egg Day today, so what better way to celebrate than with an eggy breakfast sandwich?!

I’m really excited to announce that this recipe is in collaboration with Follow Your Heart! They’re one of my favorite brands, and I’ve gotten so many requests to make more recipes using their products from y’all, since they’re so accessible across the US. The products I used in this recipe are their Vegan Egg, Medium Cheddar Style Slices, and Chipotle Vegenaise. They’re so dang good and really send this recipe over the top.

So let’s talk pretzel bagels first shall we? They’re pretty easy to make on your own honestly, BUT if you don’t want to make your own you can get them from Einstein Bros. Bagels (and yes they’re vegan!). Alternatively, in the spring months, Trader Joes sells pretzel bagels! If you don’t want to make your own, or can’t find a pretzel bagel though, really any type of bagel you want will do just fine. Slice them in half, toast ’em up, and let them chill while you make the rest of the sandwich components.

First, start out by cooking your breakfast sausage patties according to the package instructions. I used Gardein Breakfast Sausage Patties, but any kind you like will do just fine! While those are cooking, start on the eggs. Using the Follow Your Heart Vegan Egg, cook it according to the package instructions, seasoning with salt & lots of black pepper to taste.

To make the Chipotle Maple Aioli, simply mix together your Chipotle Vegenaise with Maple Syrup & a pinch of salt, and place in the fridge (covered) until ready to use. To assemble, add some mixed greens to the bottom half of the bagel, then some of your Follow Your Heart Scrambled Egg, a slice (or two if you’re feeling nasty) of Follow Your Heart Medium Cheddar Style Cheese Slices, 1-2 Breakfast Sausage Patties, and a healthy amount of that Chipotle Maple Aioli. Top with the other half the bagel, and DEVOUR THEM IMMEDIATELY.

These Sausage, Egg, & Cheese Breakfast Sandwiches on Pretzel Bagels with Maple Chipotle Aioli are the PERFECT way to get your day started. Or your night started. Really anytime of day started. And they're fully VEGAN!

Ingredients

  • 4 vegan breakfast sausage patties I used gardein
  • 4 slices of Follow Your Heart Medium Cheddar Cheese or 8 if you want to double it up on each sandwich
  • 3 servings of Follow Your Heart Egg cooked & seasoned with salt / pepper
  • Handful of mixed greens
  • 1 cup Follow Your Heart Chipotle Vegenaise
  • 1/8-1/4 cup maple syrup
  • Oil for cooking
  • Salt / pepper to taste
  • 4 Pretzel Bagels

Instructions

  1. Cook your breakfast sausage patties according to package instructions, as well as the follow your heart egg (in separate pans).
  2. Mix together your chipotle vegenaise & maple syrup to taste. Place in the fridge until ready to use.
  3. Toast up your bagels, then add some mixed greens on the bottom, then some of the egg, a slice or two of medium cheddar cheese, your sausage patty, and the maple chipotle aioli & top with the other half of your bagel. Then dig in!
