
I know most of y’all who take CBD take it first thing in the morning, to help calm down that anxiety ASAP for the day ahead. But what better way to get that CBD in then to combine it with breakfast?! These sweet & tangy CBD Infused Blueberry Muffins with Pineapple Glaze are the perfect breakfast, and are packed full of all the amazing CBD benefits you know and love.

I partnered up with CBDfx to bring you this recipe. Let’s talk about what the heck CBD even is, shall we?
It’s not a stretch to say that CBD (cannabidiol) is one of the most exciting and promising compounds currently undergoing rigorous medical and scientific research. CBD has made headlines in recent years for some pretty stunning results. Still, misinformation and confusion about CBD abounds due to the relatively recent emergence and widespread awareness of this incredible compound. Let’s take a deep dive into what cannabidiol (CBD) is, and exactly what it does — and doesn’t — do.
CBD is simply short for “cannabidiol”, the second-most abundant cannabinoid molecule produced by the cannabis or hemp plant. The most abundant molecule, of course, being THC: the psychoactive chemical famous for making users feel “high” (CBD does not have this effect). Keep in mind that your body already has an endocannabinoid system, an extremely important molecular system that your body uses to regulate and perform various critical functions. CBD binds to receptors in this system; our bodies were designed to interface with cannabinoids from the very beginning — we even naturally produce them!
But how does CBD work exactly? As we stated earlier, your body already has a wildly complex endocannabinoid system that affects several different areas and functions. That system is rife with “receptors,” sites that await cannabinoid molecules presence. When the cannabinoid nears, the receptor will bind it to itself, creating a sophisticated chemical interaction that modern science is only just beginning to scratch the surface of understanding.
Unlike its sister molecule THC, CBD does not make you feel high — but don’t think that a lack of psychoactive or intoxicating effect means that nothing is occurring. On the contrary, it’s very clear that there are many chemical responses that occur when CBD binds to those cannabinoid receptors. That being said, the endocannabinoid system is ubiquitous in the human body, affecting nearly all major functions in some way (especially homeostatic regulation). Because of this, it’s quite a task to discern everything that CBD does, exactly, when the binding occurs. That’s where the research is at right now: trying to solve that very mystery. There is plenty of information on the internet, especially CBDfx’s website if you have any further questions on it!

These muffins are super easy to make & don’t require a lot of dishes either which is perfect! First, preheat your oven to 375F, and add cupcake liners to a muffin tray (this recipe makes 12 muffins). Then you’ll need to make your chia egg, which is just 1 tablespoon chia seeds mixed with 2 tablespoons water, that will need to sit for about 5-10 minutes until it becomes thick and gelatinous.
After you’ve started that, you can mix together your room temperature vegan butter & sugar until smooth. Then add in your vanilla extract, room temperature plant milk (I always use regular unsweetened almond milk for baking), your chia egg, lemon zest, and however many droppers full of the CBDfx Blueberry Pineapple Lemon tincture as you wish!

In a separate bowl, combine your flour, baking powder, baking soda, and salt. Add your dry ingredients to the wet (half at first, mix, then the second half) & mix JUST until combined. You don’t want to over mix this because it’ll make your muffins dense and rubbery. In another bowl, coat your blueberries (frozen or fresh) in a few tablespoons of flour. This will help them from sinking to the bottom of the batter! Add those to the muffin batter, and gently fold in.

Scoop the muffin batter into each cupcake liner, almost to the top. Sprinkle with some extra sugar if desired (it gives a nice little crunch), then place into your 375F preheated oven for 17-21 minutes until a toothpick comes out the center clean! Allow the muffins to cool COMPLETELY before you go to ice them! To make the icing, all you have to do is mix some powdered sugar with pineapple juice. When the muffins are cool, drizzle over some icing and you’re good to go!

And that’s it! Super easy, and are the perfect on the go breakfast to keep you full and relaxed throughout your morning. These really are so quick to whip up, and trust me- this blueberry pineapple combo will have you obsessed.
You can also adjust the amount of CBD to your liking, making it less strong, or even stronger if you prefer… or even leaving it out all together. All of my CBD infused recipes can easily be made without CBD. The back of the package has all dosage instructions so follow those accordingly.

CBD Infused Blueberry Muffins with Pineapple Glaze
Sweet & Tangy VEGAN Muffins infused with CBD are the perfect way to get your day started.
Ingredients
- 2 Cups All-Purpose Flour + 2 tbsp to coat blueberries
- 1/3 Cup Vegan Butter room temperature
- 1 Tsp Vanilla Extract
- 1/2-2/3 Cup Cane Sugar to taste
- 1 Cup Plant Milk I used regular unsweetened almond milk
- 1 Chia Egg*
- 1/2 Tsp Salt
- 2 Tsp Baking Powder
- 1/4 Tsp Baking Soda
- 1 Cup Blueberries**
- Zest from 1 Lemon
- CBDfx Blueberry Pineapple Lemon Flavored Tincture however many droppers full you'd like
- 1 cup powdered sugar
- 1-3 tsp pineapple juice
Instructions

Preheat your oven to 375 degrees. Add liners to your cupcake tins and set aside.

Combine vegan butter and sugar until smooth. Stir in vanilla, plant milk, CBD tincture, chia egg and lemon zest.

In a separate bowl, combine flour, baking powder, baking soda, and salt.

Pour dry ingredients into bowl with wet ingredients and stir just until combined – be sure not to overmix or else your muffins can become dense and rubbery.

In a bowl, toss blueberries with 2 tbsp. of flour to avoid the blueberries sinking to the bottom of the muffins. Stir into muffin batter.

Scoop batter into muffin tins and top with a sprinkle of sugar if desired. Bake for 17-21 minutes or until lightly brown on top, and until a toothpick inserted into the middle of the muffins comes out clean.

Allow to cool completely, and when cooled mix together your powdered sugar and pineapple juice until an icing forms, drizzle over top of the muffins and top with more chia seeds.
Recipe Notes
*Mix 1 tbsp ground chia seed with 2 tbsp water and allow to sit for 5 minutes until it gelatinizes. Use the same as an egg
**You can use fresh or frozen blueberries. If you use frozen, let them thaw completely and remove as much moisture as possible from them before adding to the dough
