Y’all know I’m all about that Mac & Cheese life… I just crave it all the dang time and theres nothing I can do about it ??? There’s several recipes and variations on here, but this one… holy fuck this one. It’s THE FUCKING BEST. Like tell me that Loaded Baked Potato Mac & Cheese doesn’t already sound amazing, but then you add CBD into it? Game fucking over. This dish is also cool, because it’s all gluten free except the pasta, so you can easily make that swap and you’re good to go on that front.
I partnered up with CBDfx to bring you this recipe. Let’s talk about what the heck CBD even is, shall we?
It’s not a stretch to say that CBD (cannabidiol) is one of the most exciting and promising compounds currently undergoing rigorous medical and scientific research. CBD has made headlines in recent years for some pretty stunning results. Still, misinformation and confusion about CBD abounds due to the relatively recent emergence and widespread awareness of this incredible compound. Let’s take a deep dive into what cannabidiol (CBD) is, and exactly what it does — and doesn’t — do.
CBD is simply short for “cannabidiol”, the second-most abundant cannabinoid molecule produced by the cannabis or hemp plant. The most abundant molecule, of course, being THC: the psychoactive chemical famous for making users feel “high” (CBD does not have this effect). Keep in mind that your body already has an endocannabinoid system, an extremely important molecular system that your body uses to regulate and perform various critical functions. CBD binds to receptors in this system; our bodies were designed to interface with cannabinoids from the very beginning — we even naturally produce them!
But how does CBD work exactly? As we stated earlier, your body already has a wildly complex endocannabinoid system that affects several different areas and functions. That system is rife with “receptors,” sites that await cannabinoid molecules presence. When the cannabinoid nears, the receptor will bind it to itself, creating a sophisticated chemical interaction that modern science is only just beginning to scratch the surface of understanding.
Unlike its sister molecule THC, CBD does not make you feel high — but don’t think that a lack of psychoactive or intoxicating effect means that nothing is occurring. On the contrary, it’s very clear that there are many chemical responses that occur when CBD binds to those cannabinoid receptors. That being said, the endocannabinoid system is ubiquitous in the human body, affecting nearly all major functions in some way (especially homeostatic regulation). Because of this, it’s quite a task to discern everything that CBD does, exactly, when the binding occurs. That’s where the research is at right now: trying to solve that very mystery. There is plenty of information on the internet, especially CBDfx’s website if you have any further questions on it!
First you’ll want to start out by making the cheese sauce. This is really similar to the CBD Infused Smoked Gouda Cheese Sauce recipe on my site, but just without liquid smoke since we’re getting that smoky-ness from the vegan bacon. Basically all you have to do is blend your ingredients in a high-powered blender until smooth. You want this to be like a thin pancake batter because it’ll thicken as it bakes in the oven.
Once your cheese sauce is made, you can work on all the other components. Peel and dice your potatoes, and boil them until fork tender, then drain. Chop whatever vegan bacon of your choosing into small pieces, and crisp up in some oil (I prefer tempeh bacon, but use whatever you want!). Cook your pasta according to package instructions and drain.
Mix together your cheese sauce, pasta, potatoes, vegan bacon, and scallions- then place into a baking dish. Add to your preheated 350F oven & cook for 20-25 minutes until the sauce has thickened & gotten all nice and bubbly. You can also broil it for a few minutes after if you want it nice and browned. Top with some extra vegan bacon, chopped scallions, and drizzle over your vegan sour cream. And boom! You’re done.
You can also adjust the amount of CBD to your liking, making it less strong, or even stronger if you prefer… or even leaving it out all together. All of my CBD infused recipes can easily be made without CBD. The back of the package has all dosage instructions so follow those accordingly.

CBD Infused Loaded Baked Potato Mac & Cheese
Creamy, smoky, loaded baked potato mac & cheese that's infused with CBD is sure to be your next favorite thing! It's addicting.
- 2 cups raw unsalted cashews
- 1 package Field Roast Chao Cheese creamy original flavor
- 3 tbsp smooth Dijon mustard
- 1 tbsp crushed red pepper flakes
- Salt / black pepper to taste
- 4-6 cups regular unsweetened almond milk
- 2 tsp lemon juice
- 2 tbsp garlic powder
- 4 droppers worth of CBDfx Hemp+ MCT oil 30ml 500 series tincture
- 2 large russet potatoes
- 1 cup of vegan bacon plus more for topping
- 1/2 cup scallions plus more for topping
- 1 lb. macaroni I used cavatappi
- 1/4 cup vegan sour cream
- Cracked black pepper to taste
Add all of your ingredients to a high-powered blender (chopping up the chao cheese into rough cubes first), and blend until smooth.
Start with less almond milk & seasonings than necessary and keep adding more until everything is blended well together without any grittiness. You want this to be the consistency of a thin pancake batter.
Preheat your oven to 350F.
Boil your pasta until almost cooked, drain & toss with a bit of oil so it doesn’t stick together.
Peel and chop your potatoes into small chunks. Boil them until almost fork tender & drain.
Chop your vegan bacon into “bits” and crisp up in a pan with a small amount of oil.
Mix your cheese sauce, cooked pasta, potatoes, vegan bacon (reserving some for topping after), and chopped scallions (reserving some for topping after), & place into a baking dish.
Bake in your preheated oven for 20-25 minutes until bubbly, thickened, and golden brown. Remove from the oven and allow to cool for 5 minutes.
Top with the reserved vegan bacon & scallions, drizzle with your vegan sour cream, and add cracked black pepper.
