So, for those of you who follow along my crazy antics on Instagram, you might remember a very late night instastory I posted like 60 something weeks ago, making chocolate chip banana muffins using up some brown bananas I just felt too bad throwing away. The recipe was something I made up on the fly, I had no idea if it’d actually work or turn out well, but it turned out to be SO good, SO easy, and SO many of you have recreated them and have been just as obsessed as I have. Since the recipe is only on an Instagram highlight currently, I figured I’d give it it’s well deserved proper spot on my site- making it easier for y’all to get the actual recipe perfect.

First you’ll start out by mixing your flour, sugar, baking powder, and salt together in a large mixing bowl. In a separate bowl, mash 2 over-ripe brown bananas very well, then add in your melted vegan butter, room temperature almond milk, chia egg, and vanilla extract & mix very well. Add the two mixtures together and with a rubber spatula, fold together until JUST combined. You don’t want to over mix. Coat your chocolate chunks (or chocolate chips) in a bit of flour (this prevents them from sinking to the bottom of the batter), and fold those in gently.

Take a muffin tray and fill it with 12 muffin / cupcake liners. Fill each liner up with enough batter to almost be at the top of the liner but not quite. Sprinkle over a little extra cane sugar, then place into a 350F preheated oven for 30-35 minutes until they’re golden brown on top and a toothpick comes out clean! Remove from the oven and allow to cool in the baking tray for 5-10 minutes before removing to let them cool further.

Chocolate Chunk Banana Muffins

These vegan, fluffy, and delicious chocolate chunk banana muffins are the perfect way to use up those brown bananas sitting on your counter!

Dry Ingredients

  • 1 1/2 cups all purpose flour
  • 2/3 cups organic cane sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 2 over ripe brown bananas mashed
  • 1 chia egg 1 tbsp chia seeds + 2 1/2 tbsp water
  • 1/2 cup melted vegan butter
  • 1/4 cup room temperature regular unsweetened almond milk
  • 2 tsp vanilla extract


  • 1 1/2 cups dark chocolate chunks
  • 1 tbsp all purpose flour


  1. Mix all of you dry ingredients in a bowl until well combined.

  2. Mix all of your wet ingredients in a different bowl until well combined. Make sure to mash up the bananas very well.

  3. Mix the wet & dry together with a rubber spatula and fold until JUST combined. You dont want to over mix this.

  4. Coat your chocolate chunks (or chips) with a bit of flour, and fold those in.

  5. Fill a muffin tray with muffin / cupcake liners, and fill each one almost to the top. This recipe makes exactly 12 muffins. Top each muffin with some extra cane sugar.

  6. Bake in a 350F preheated oven for 30-35 minutes until golden brown and toothpick comes out clean.
