THE Tomato & Mayo Sandwich

For some of you, you might not have ever heard of this sandwich… but for others, you KNOW this sandwich. And not just know it, you freakin damn love it. And hey hi hello that is me. My Grandma used to make this for me as a snack growing up, and still to this day it’s one of my favorite fucking things to eat- especially over the summertime when the tomatoes are at peak amazing-ness. This isn’t really a proper “recipe”, its more just what ya need and that’s really it.

The most important part of this sandwich is the tomato… duh. You can really use any kind you like but they have to be RIPE otherwise this just isn’t that good haha. In the summer months I love using Heirloom Tomatoes because they’re incredibly sweet, juicy, and delicious. The other things you’ll need besides tomatoes are, marble rye bread (important), vegan mayonnaise (very important), salt & fresh cracked black pepper (very very important). Also, YES you have to use marbled rye. I don’t make the rules sorry, that’s just how this sandwich works. And yes you have to use way too much black pepper & cut the sandwich diagonally. Like I said… I don’t make the rules.

A little pro tip too, after slicing your tomatoes (not too thick, not too thin), place them between some paper towels to soak up the extra juices. This is like SO KEY because it helps your sandwich not slip and slide all over the place and be a huge mess. I do this with any sandwich that involves tomatoes also, to be honest.

So pretty much all you gotta do is slice your tomatoes & do the little trick mentioned above, toast some marbled rye bread, slather each slice HEAVY with vegan mayo, pile up your tomatoes, and add salt and like probably way too dang much cracked black pepper. You can get all fancy and add some basil as well if you’d like, but I like it just how it is.

THE Tomato & Mayo Sandwich

Do I even need to explain this? All I have to say is that it's the sandwich of your dreams.

Prep Time 5 minutes
Servings 2 sandwiches

Ingredients

  • 2 heirloom tomatoes *any kind of ripe tomato will work
  • 4 slices marbled rye bread
  • 1/4ish cup vegan mayo *all depends how much you want on the sandwich
  • salt
  • freshly cracked black pepper

Instructions

  1. Slice your tomatoes (not too thin, not too thick) and place between paper towels to absorb excess moisture.

  2. Toast your marbled rye bread well.

  3. Slather the toast with lots of vegan mayo, salt, and pepper. Then pile high with your tomatoes. Close the sandwich and slice diagonally.

Recipe Notes

Can be made gluten free by using gluten free bread.
