So… here’s the part 2 of toast recipes this week, except it’s the sweet remix. I love toast, it’s the perfect quick snack & there are so many ways to switch it up- sweet & savory! This toast is inspired by one of my favorite toasts from Sqirl here in Los Angeles, but unfortunately they don’t offer a vegan version. It’s something I crave all the time, so I decided I had to veganize it! This toast takes literally just a few minutes to make, so let’s just get into it!

The two main elements of this toast besides the bread are a mint ricotta & raspberry jam. You can really use whatever kind of jam you’d like, but the coldwater canyon baba raspberry jam off Milk & Eggs is literally what dreams are made of. I prefer to use a jam that has a bit of tartness to it, so that it can offset the creaminess of the ricotta. For the ricotta, I just used the Kite Hill Ricotta & mixed in some lemon juice, & fresh mint. You can additionally add a bit of maple syrup if you want it to be really sweet, but I prefer it on its own.

I like using sourdough bread for this, but let’s be real… I use sourdough bread for everything. I toast it on both sides, then smear a generous amount of the mint ricotta on top. Follow up with some of the beautiful baba raspberry jam, and some extra mint if you desire! And that’s it! I told you, hella fucking easy. I love this too because it’s something you can easily & quickly whip up mid day, but it makes you feel like you are having some super fancy treat. I also love how versatile this recipe is. You can pretty much use any jam or jelly that you like, and can season up your ricotta with anything from fresh mint to ground cinnamon!

Jam & Ricotta Toast

This Baba Raspberry Jam & Mint Ricotta Toast is the perfect sweet afternoon treat, that’s vegan & takes 5 minutes to whip up!

  • Sourdough Bread *you can use gluten free
  • 1 package kite hill ricotta
  • 1 jar coldwater canyon baba raspberry jam
  • 1 tbsp fresh mint *plus more for garnish
  • 1/2 tsp fresh lemon juice


  1. Lightly toast your sourdough bread on both sides.

  2. In a bowl, mix your ricotta, fresh mint, & lemon juice until well combined. 

  3. Smear a generous amount of ricotta onto each piece of toast, and top with baba raspberry jam & fresh mint if desired.
