Cheesy Caramelized Onion Toast

Who doesn’t love a good carb-y, cheese-y snack during the day? I sure do! This Cheesy Caramelized Onion Toast is the perfect thing to curb all your cravings, and honestly is just absolutely fucking delicious.

You’ll want to start with the caramelized onions, because they’re gonna take the longest! They’re super simple though. Slice your onions into as thin half moons as you possibly can (you can even use a mandolin). I personally don’t like really thick onions, but you can cut them to whatever thickness you’d like. Add them to a skillet over medium heat with your grapeseed oil, salt, pepper, balsamic vinegar, and fresh thyme. Allow these to cook for 20-25 minutes, stirring frequently until browned and caramelized.

Once your caramelized onions are ready, lightly toast both sides of some freshly cut sourdough bread. Top each slice with a hefty amount of the caramelized onions, and also a generous amount of shredded vegan mozzarella cheese. Place each slice on a baking tray, and place under the broiler for a few minutes until the cheese is bubbly, melty, and browned. I like to put it in the middle rack of my oven for this, instead of directly under the broiler- since vegan cheese takes a bit longer to melt & you don’t want to torch the bread. When the toast is done, take it out of the oven & garnish with fresh thyme leaves, and if desired some salt, pepper, balsamic vinegar, and olive oil.

And that’s it! This recipe is super easy, and you can always double or triple the recipe for the onions & keep them in the fridge for quicker toasts. I could seriously eat these all day, & trust me… you’ll be hooked once you try it!

Cheesy Caramelized Onion Toast

This savory, cheesy, and absolutely delicious caramelized onion toast is the perfect mid-day snack, that’s 100% vegan!

Ingredients

  • 1 loaf sourdough bread cut into slices (you can use gluten free bread)
  • 2 large yellow onions
  • 3-4 tbsp grapeseed oil
  • 1/2-1 tbsp sea salt
  • 1 1/2 tbsp balsamic vinegar
  • 1 tbsp fresh thyme
  • 1 tbsp black pepper
  • 1 cup vegan mozzarella cheese

Instructions

  1. Slice your bread and lightly toast it on both sides. 

  2. Slice your onions into thin half moons & add to a skillet over medium heat with the grapeseed oil, salt, pepper, balsamic vinegar, and fresh thyme.  Allow to cook for 20-25 minutes over medium heat until caramelized & browned.  

  3. Scoop a generous portion of caramelized onions onto each piece of toast, then top with a generous amount of shredded vegan mozzarella cheese.

  4. Place under the broiler for a few minutes until the cheese is melty and browned.  

  5. Garnish with fresh thyme, and salt / black pepper / balsamic vinegar & olive oil if desired!
