Breakfast tacos are one of my favorite things to make in the morning. They’re so easy, completely customizable, and are great if you’re cooking for a large crowd. They’re also just hearty enough without being too heavy for a meal early on in the day. The ones I am showing you today, are just what my personal favorite toppings are… but you can easily change up the toppings to your liking!

So for these tacos, I used some readily available vegan products, but you can easily make your own as well. For example, I used the Follow Your Heart Egg for this, but you could make your own Tofu Scramble. For the “meat” aspect, I used Abbot’s Butcher Ground Chicken, but you can use any vegan ground product, jackfruit, lentils, beans, veggies… really anything you’d like!
Start out by cooking the follow your heart egg according to package instructions. While that’s cooking, heat up your vegan ground chicken in a skillet with some olive oil & your spices. Cook this just until browned. Once those are done, set them aside & char your corn tortillas over an open flame or in a dry skillet. Then comes assembly / toppings. I like to double up the tortillas so they don’t rip while eating… then add your egg, chicken, plain yogurt as “sour cream”, avocado, and cilantro. I like to serve all tacos with a side of salsa, lime wedges, and radishes.
Like I said, these tacos really are so easy & are the perfect breakfast! And you can totally customize them to your liking. Wanna add some sautéed peppers and onions? Do it! Want salsa verde instead of pico de gallo? Go for it! Want guacamole instead of sliced avocado? Perfect. Just use what you have and / or like & I promise they’ll be great.

These simple vegan breakfast tacos are the perfect way to start your day.
- 1 serving Follow Your Heart egg
- 1 package Abbot's Butcher ground chicken or any vegan ground product
- 2 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1 tsp pink Himalayan salt
- 1 tsp chili powder
- 1 container Kite Hill Plain Yogurt (used as sour cream)
- 2 tbsp extra virgin olive oil
- pico de gallo / salsa
- corn tortillas
- lime wedges
- fresh cilantro
Cook the follow your heart egg according to package instructions.
In a skillet over medium heat, add your olive oil, Abbot's Butcher Ground Chicken, cumin, cayenne, salt, & chili powder. Cook until browned & set aside.
Char your tortillas over an open flame or in a dry skillet for a minute or two. Add your vegan egg, ground chicken, sliced avocado, fresh cilantro, & a drizzle of yogurt to each taco. Serve with radishes, lime wedges, and salsa on the side.
