Korean Kimchi Beef Bowl

Now that spring and summer are here, I’ve been craving fresh, healthy meals that aren’t just a typical salad.  This Korean Kimchi Beef Bowl is healthy, fresh, and packed full of amazing flavor.  It’s super easy to put together, and you can get the ingredients needed to make this delivered right to your door… how cool is that?!

While we’re here, let’s talk about the “meat” aspect of this quick, shall we?  Because I know a lot of you are probably wondering how something like this can even be plant based, and how to get it.  The Abbot’s Butcher makes the most incredible plant based meats I’ve ever come across. I’m so excited to be working with them, getting to create really fun recipes like this for you guys- and I stand by this brand 100%.  They use whole foods in their products, compared to a lot of their vegan meat competitors, which means this is a vegan meat you can eat on a more regular basis because it’s actually good for you!  On top of being healthy, they really are the closest product I’ve personally ever tried to the real thing.  The texture & taste are beyond spot on, and I really hope you guys all get to give them a try!


This bowl really couldn’t be simpler to put together.  The only cooking required is making your rice and cooking the “ground beef”.  Cook your rice according to package instructions, and allow to cool slightly before adding to the bowl.  For the beef, heat a few tablespoons of toasted sesame oil in a skillet over medium heat and then add 1 package of Abbot’s Butcher Ground Beef.  Allow to cook for a few minutes until it starts to brown, and then add some teriyaki sauce (please note the teriyaki sauce mentioned in the recipe contains honey, but you can easily find teriyaki sauces that don’t!) & allow to cook for another few minutes until everything is warm and sticky.


For the vegetables, thinly slice your yellow bell pepper, and chop up your cilantro, scallions, and Serrano peppers.  For the cucumbers, using a vegetable peeler, make long cucumber strips, and then roll them up into little roses.  You can easily just chop them up if you don’t want to do this, but it adds a lot to the presentation of the dish.

Once your rice and “beef” are ready, you can assemble your bowl!  Place your rice in the bottom of the bowl, and then add your beef, vegetables, kimchi, and herbs.  Top the beef with some sesame seeds for some added crunch.

Korean Kimchi Beef Bowl

This Korean Kimchi Beef Bowl is the perfect Spring / Summer meal.

  • 1/2 cup Stonewall Kitchen Sesame Ginger Teriyaki Sauce (or any teriyaki sauce)
  • 1 cup cooked white or brown rice
  • 1 package Abbot's Butcher Ground Beef
  • 1 yellow bell pepper
  • 1/2 cup kimchi
  • 1 cucumber
  • 1/2 cup fresh cilantro
  • 1/2 cup fresh scallions
  • 1 serrano pepper
  • 2 tbsp sesame seeds
  • 2 tbsp toasted sesame oil


  1. Add your toasted sesame oil to a skillet over medium heat.  Once its heated, add in your "ground beef" and cook until it starts to brown.  Then add your teriyaki sauce and allow to cook on low heat for a few minutes until everything is heated through. 

  2. While your beef is cooking, thinly slice your yellow bell pepper, using a vegetable peeler, shave your cucumber into strips and roll them into little roses (optional), and chop up your cilantro, scallions, and Serrano pepper. 

  3. Add your cooked rice to the bottom of a bowl, and then top with your teriyaki "ground beef", a healthy scoop of kimchi, and all of your vegetables / herbs.  Garnish the beef with sesame seeds.
