Chia Puddings are some of my favorite go to breakfasts, because they really satisfy your sweet tooth, are super simple to make, and are made the night before so it’s easy in the morning!  These specific chia puddings are extra easy, because we’re using flavored Califia Almond Milks as our base!  You only need a couple of ingredients to make these, and the almond milks you can order from Milk & Eggs!

So let’s talk about these almond milks and their flavors.  I chose to use these two from Califia Farms, Matcha Almond Milk & Ginger Turmeric Almond Milk.  The Matcha one is very sweet and earthy, and really has a strong matcha / green tea flavor which I love.  The Ginger Turmeric one reminds me of a golden milk.  It’s spicy, yet sweet, and I’m sure is great to boost your immune system if you’re sick!  You can obviously use any flavor almond milk for this, or if you can’t find these guys, you can make your own flavors!

So for both of these puddings, you’ll need the same ingredients.  Your flavored almond milk, coconut nectar (or maple syrup), and chia seeds.  Like how easy is that!? Simply mix your almond milk with the chia seeds and coconut nectar, transfer to a mason jar, and place in the fridge.  I don’t think I could make this any simpler for you guys.  You’ll need to let these set up for at least 3-4 hours, but overnight is ideal.  These are great because they take all of 3 minutes to assemble and get in the fridge, and if you do it the night before it’s a great grab and go breakfast.

So as far as toppings and add ons go, you can enjoy the puddings by themselves, but I like to add extra goodies to make them seem a whole lot fancier.  For the matcha pudding, I added raspberry jam, and fresh raspberries (also sold on milk & eggs).  Layer the pudding, then jam, pudding, jam, then raspberries.  It’ll look really pretty and like a parfait in your dish! For the ginger turmeric pudding, I paired this up with plain vegan yogurt, and a fresh mango rose (also sold on milk & eggs).  The mango rose is super easy to make and is really such a show stopper.  For this just peel your mango, take one section you cut off and slice very thin.  Slowly spread out the mango slices into a “U” shape, and then start rolling!  There are plenty of YouTube videos on how to make mango roses, but if you can’t find any you can also look up an avocado rose as well because you use the same technique!  I like to assemble and add my toppings right before eating because I think it tastes better this way, but you could definitely assemble this the night before if needed!
And that’s pretty much it!  I don’t think this could get any easier, right?  Such a quick recipe that is so stunning and looks a whole lot fancier than it is… plus you can get the ingredients delivered to your door?  Yes please!  I really hope you guys enjoy this recipe!

Chia Pudding Two Ways

Matcha Chia Pudding with Raspberry Jam & Fresh Berries 

Ginger Turmeric Chia Pudding with Vegan Yogurt & Mango 

Both made super easy in less than 5 minutes!

Ingredients

  • 1/2 cup chia seeds
  • 1 cup matcha almond milk Califia Farms
  • 1 cup ginger turmeric almond milk Califia Farms
  • 4 tbsp blonde coconut nectar
  • 1 mango
  • 1/4 cup raspberry jam
  • 1/4 cup vegan yogurt
  • 8-10 fresh raspberries

Instructions

  1. Mix 1 cup of almond milk with 1/4 cup chia seeds and 2 tbsp coconut nectar.  Stir, transfer to an airtight container and place in the fridge at least 3-4 hours, overnight is preferred.  

  2. Once the puddings have set, layer them in a cup with the raspberry jam / raspberries or yogurt / mango rose.  Serve immediately and enjoy!
